This is a complementary side dish when making deep fried chicken thighs using a deep fryer, as the oil is already hot and you can use up any leftover buttermilk marinade and flour mixture from the chicken.
Brine ingredients:
- 1 large onion, peeled
- 2 Tbsp salt
- ½ lemon juice
- Water
Instructions:
- Slice the onion in wedges creating a flower, leaving the bottom in tact (see picture).
- Add onion, salt, and lemon juice to bowl and cover with water.
- Brine for two hours.
- Cut onion flower in half.
- Roll pieces in leftover chicken marinade, trying to get it between the petals, then roll flower mixture in between petals (see video).
- Deep fry for about 8 minutes, flipping periodically, until golden brown.
- Serve with dipping sauce of your choice.
