Blooming Onion

This is a complementary side dish when making deep fried chicken thighs using a deep fryer, as the oil is already hot and you can use up any leftover buttermilk marinade and flour mixture from the chicken.

Brine ingredients:

  • 1 large onion, peeled
  • 2 Tbsp salt
  • ½ lemon juice
  • Water

Instructions:

  1. Slice the onion in wedges creating a flower, leaving the bottom in tact (see picture).
  2. Add onion, salt, and lemon juice to bowl and cover with water.
  3. Brine for two hours.
  4. Cut onion flower in half.
  5. Roll pieces in leftover chicken marinade, trying to get it between the petals, then roll flower mixture in between petals (see video).
  6. Deep fry for about 8 minutes, flipping periodically, until golden brown.
  7. Serve with dipping sauce of your choice.
